Food Tuesday: Catfish

I didn’t post yesterday because I was at InConjunction all weekend selling books hand over fist.

We took our own food, because who can afford to eat hotel food all weekend? Not us. We didn’t cook, though, we bought premade but thrifty.

ANYWAY, before we left, #4 Daughter made that steak I shared how to make. I didn’t throw away the drippings, and the next day I roasted potatoes and fresh green beans on the drippings pan.

I also fried some catfish. I dredged the fish in cornmeal mix, which has flour in it, and pepper, with a little citric acid for a hit of lemon, then fried it about 7 minutes a side.

Yeah. That.

    It’s hard to find good catfish around here. I should send this post to the few restaurants that try (and fail). Maybe they could learn something. That looks delicious.

    That looks yummy, Mairan. Admittedly I’m not usually a catfish fan. Although I do love fish, and once in a while catfish hits the spot. The way you described this, it really sounds delish. Big congratulations on a successful InConjunction. Hugs.
