Food Tuesday: Killer Tomato Soup For One

Yes, I’ve seen the movie and no, this has nothing to do with it. It’s just really good soup.

Start by dicing a thick slice of onion and mincing a fat clove of garlic. Cook those in butter in a saucepan until they’re fragrant. Then add pepper, a little (8 oz) can of tomato sauce, and some Italian seasoning (oregano, basil, and stuff). You probably don’t need to add salt, since the canned tomato sauce is salty, but you do you. Finally, core a real tomato, cut the tomato in half, and put the halves into the soup.

Baste the tomatoes with the broth, turn them over and cook them a bit, turn them back over, and the peels should just slip right off. Use tongs, if you need to. Cook the tomatoes until they’re soft, then cut them up with kitchen shears.

I know, I know, the cookbooks and blogs say to use a fork or two knives, but we all know they’re in the pockets of Big Flatware. Scissors work fine.

If you don’t have a real tomato, use canned diced tomatoes.

When the tomatoes are a soft as you like, eat that soup!

    I was gonna ask about the grilled cheese. Those to things are inseparable in my mind. The soup looks good and I laughed at the comment about big flatware. They scroll the “sponsors” pretty fast on those shows, but we know why they use what they use.

      I didn’t intend to have grilled cheese with this, but I couldn’t NOT. Like I HAVE to have mashed potatoes and green beans with meat loaf.
