Food Tuesday: A Tale of Two Pork Chops

I bought two hella thick pork chops from the farmers market and made Miss Billy’s Pork Chops for Sara and Michael and myself. Then I had leftovers for two days, then I decided to cut up what was left of the pork in what was left of the gravy and serve it over noodles, but I didn’t have noodles, so I made some.

First, Miss Billy’s Pork Chops

Heat a little oil or shortening or butter or whatever in a skillet. Dry the pork chops, smear them with plain yellow mustard and season them (I used salt, pepper, and Penzeys Bavarian seasoning). Brown them on both sides. Take the chops out and deglaze the pan with a little water.

I cooked these in a crock pot, but you can cook it in the skillet, too; it’s just sooooo tender if you cook it in the crock pot.

ANYWAY, to the skillet or the crock pot, add canned cream of mushroom soup. We like gravy, so I used two cans of soup and a can of water. Put the chops back in and cover them with the gravy. Cover the pan and cook low and slow. I would cook them in the skillet at least an hour. I cooked them in the crockpot on low for about six hours without opening the lid.

I made the noodles with my pasta roller. When my wrists were broken, I binged a lot of baking shows, and decided I just couldn’t live without a pasta roller, so I ordered one. Could I knead dough with two broken wrists? Why, no, I couldn’t.

But I can now. Flour, salt, egg, water. Don’t ask me how much; I just do it. Knead it for about ten minutes, then wrap it and let it rest for about 15 minutes. Pinch off knobs and run them through the pasta roller many times, beginning on setting 1 or 2 and gradually working up to about 7. Keep the sheets of dough lightly floured so they don’t stick.

I got the model that had a cutting attachment, so then I cut the sheets into noodles.

Okay, I cooked a metric fuck ton of mushrooms and added the gravy and leftover pork chop shreds to that pan while the noodles were cooking (it takes about two minutes for fresh pasta).

Didn’t look like a lot until I added the noodles.

Sara and I stuffed ourselves and I had enough to eat the next day, too.

Two chops, eight meals.

Not bad.

    I love leftovers turned into new meals. And if the new meal has noodles – bonus. And if the noodles are homemade, bonus to the 3rd power.

      🙂 Noodles are pretty easy to make, if you don’t have to roll them out. I can never get them to the right — or an even — thickness by hand. At least the roller I got is hand-cranked and not electric, so I can pretend they’re hand-rolled. lol
