Food Tuesday: An Almost Vegan Feast

This isn’t vegetarian, but it would have been vegan if I hadn’t cooked the kale with jowl bacon, so don’t cook it with jowl bacon if you want it to be vegetarian/vegan.

This was the last of the farmers market hauls. boiled new potatoes with vegan “butter”, kale (If I hadn’t had the tail end of some jowl bacon, I would have cooked it with garlic and onion, salt and pepper), and stewed tomatoes made with a fresh tomato and farmers market bread (and frozen tri-pepper and onion blend).

I’m already looking forward to mushroom season and then the farmers markets. Love the longer nights, though. Dark and cold, like my evil heart.

      LOL! I hear you. Me, I LOVE kale, but I know it isn’t for everybody. I have two sons-in-law who love Brussels sprouts, and Brussels sprouts are to me as kale is to you.
