When I made khachapuri before, I said I would make khachapuri again, and so I have. I don’t know what put the bee in my bonnet this time, but I was jonesin’ for it bad, so I made some.
I must like this Saveur recipe, because I was too lazy to go back and find my former post, so I did a search and this was the version I liked best and it turns out to be the same one. So.
I didn’t make the dough just for this, though; I had a batch of my favorite dough already made up, as I posted yesterday at Fatal Foodies. I also didn’t have any kale or sprouts, so I did this:
Khachapuri Again
I sauteed some onion in vegan margarine and threw in some fresh spinach that was pining for the fjords and cooked it down until most of the liquid was gone. Divided it between the two khachapuri and sprinkled grated cheese over it all.
Oh, my my my my my!
