#Vegan For Christmas

I always try to take something vegan to family get-togethers, so our vegan daughter and anybody who is experimenting with veganism will have something to eat. Since I also love quick and easy, vegan food is right up my alley.

cousmushsuccCOUSCOUS WITH MUSHROOMS AND STUFF

  • 1 box pearled couscous with herbs and garlic
  • 1 can mushrooms
  • 1 can whole kernel corn
  • 1 can lima beans

Cook the couscous according to package directions. Drain the vegetables. Mix the veg into the couscous and heat through.

I think it would have been better — and certainly more colorful — with some onion and sweet red and orange peppers. But it was good, nonetheless.

    Couscous IS the best…and close to the fastest thing yiu can cook.
