I say it’s spinach is the first part of the punchline of a New Yorker cartoon that, given the #4 Daughter’s attitude, I find realistic and intensely humorous.
But that cartoon is not what this post is about. It’s about this:
I Say It’s Spinach
Spinach … thing
- 1 can spinach, drained, but not pressed. I pressed it, and I regret it.
- 2 eggs in a measuring cup
- milk in the same measuring cup to make 1 cup
- salt or Mrs. Dash to taste
- cheese
Butter a 2-quart casserole dish. Beat the milk and eggs and salt or Mrs. Dash. Mix the eggs and spinach and pour it into the dish. Top with cheese. Lots of cheese. Because I like cheese.
Bake at 450F for about an hour. If you don’t like bubbly, brown, toasted cheese, cover the dish as you bake it.
I say it’s spinach, and I say it’s good.

December 24, 2014 at 8:15amI remember my first exposure to a really good salad dressing. I was in college. It was tart, amazing, and devine. I think we were at that restaurant that had as many grand openings as Barnabas’ coffin (You said that bon mot, not I, you clever girl).
