Mushroom Hand Pie #Vegetarian

This is so, so easy, and it was really good, too — my favorite kind of food!

MushroomPocketI began with bread dough as taught me by Artisan Bread In Five Minutes A Day: Mix 1 1/2 Tablespoons yeast, 1 1/2 Tablespoons salt, 3 cups lukewarm water, and 3 cups flour until smooth. Add another 3 1/2 cups flour, working with hands ONLY enough to incorporate all the flour. Put into a loosely covered container until doubled, then refrigerate.

I heated some olive oil in a pan and sauteed some sliced mushrooms and diced onions until the onions were soft and translucent. I added a little vegan margarine and a little flour, then enough red wine to make a thick sauce.

Meanwhile, I heated the oven to 450F.

So. I pulled off a little bit of the dough and worked some shredded cheese into it, then rolled it out into a rough square. I put the mushrooms on and leveled them off, leaving wide margins. I put a slice of Swiss cheese on top, and folded the edges of the dough up. As it happened, I had room for a steam hole left in the middle. If I hadn’t, I probably would have cut some vents.

Baked this for about 20 minutes. It was heavenly hot, but it would have been good cold at a picnic, too.

    You had me when you mixed in some cheese into the bread dough. Yeah!

      It’s very sad that pigs taste so good, but you’re right — bacon makes everything better. Alas.
