The End of a Big Fat Pig

Don’t panic — it’s not a selfie.

Last fall, we bought 1/8 of a pig that must have been the size of Godzilla. We finally ate the last of it this week, and glad of it.

The last bit we had in the freezer was supposed to be a roast. I never had a pork roast with a bone in it before, but this one had one. That’s okay. I cooked it when #4 Daughter, the amazing Sara Marian, came to visit. We all ate off it, and had some left over.

Charlie and I ate off it a couple of times, and there was still a bit over! Mind you, this was not a large roast, we just don’t eat much meat.

So finally, I heated up the juice from the roast, cut up the tag end of the meat, and cooked some cabbage with it. I added some — yes, leftover — boiled potatoes and served that, with the juice, over toast.

I buy no more pig shares. EVER.

      Yes, we did. Poor sad bastard. And now I keep hearing about how smart and lovable pigs are. Why can’t they be evil?

    Can’t eat many carbs – love pork. All animals are more intelligent than we credit them with – but I remember the old joke about how if God didn’t want us to eat chickens, he wouldn’t have made them so delicious.

    I would die if my diet did not include the animal protein. It’s a sobering thought. I’m down to testing individual carbs in small servings and with digestive aids to see which ones don’t attack quite as much as the others.

      I’m fortunate enough to be omnivorous, but I crave meat so much, I think my body probably needs at least some. I’m looking forward to “clean meat,” and hoping it’ll be affordable in the small amounts I would consume.

    I know a woman who buys a half a cow every year, and has beef all in all sorts of cuts all year round. I can see how it might be more economical in the end, but I haven’t the faintest idea of what to do with all that meat in its various cuts, plus we don’t eat red meat too often. Maybe once or twice a month if that.

    Only I and Big Baby Boy like pork so buying into a half pig would be really taking a risk for me.

    So, you made your own kinda cabbage dish there. 🙂

      Yeah, Charlie can’t eat red meat at all, and half a cow would last me the rest of my life. Actually, I didn’t make my own kinda cabbage dish: This is a common dish in Kentucky — at least in my family. Sometimes we use sauerkraut instead of cabbage.
