A Mexican-ish Summer Feast #Vegetarian

Still lovin’ that farmers market freshness, but sometimes I do a dish without it.

The other day, we had this:

Yeah, pretty much all from the grocery:

Black beans and rice, “fiesta” corn from a can, avocado sprinkled with lime juice and seasoned salt, a little shredded cheese on top of the beans, rice, and corn.

Highly satisfying, even if not local.

I’m posting today at Fatal Foodies about a meal that was all fresh and local.

I’m also posting today (because the 21st of the month falls on a Tuesday) at The Write Type about a book I lately finished.

A WRITING PROMPT FROM ME TO YOU: Write about something store-bought when something fresh or local or hand-made would be more appropriate.

I was born in Louisville, Kentucky, but now live in the woods in southern Indiana. Though I only write fiction, I love to read non-fiction. The more I learn about this world, the more fantastic I see it is.

If nothing else, this would be an excellent side dish 🙂
