In case you didn’t know, I love cooking with leftovers. I love it when the fridge is crowded with the tag ends of things, and I can clean all that out AND make something delicious, all in one fell swoop ( or “in one swell foop,” as my grandpa used to say. He was a funny guy).
So the other day, I made this.
I still had a wing and most of a breast in the freezer from a chicken dinner we bought in late spring from a high school band fundraiser, so I put that into my Instant Pot with some water and cooked it with some whole celery stalks and carrots. Then I pulled the meat off the bone.
Tipper refused the scraps. He won’t eat anything except his Blue Wilderness Grain Free with Duck (not a paid endorsement).
I cut up the celery and carrots and threw in some leftover new red potatoes and green beans. I added some water, chicken bouillon, Penzeys Old World Seasoning and Penzeys Shallots.
Oh, my gosh–SO GOOD!

August 14, 2018 at 8:50amThat looks exactly like my dinner from last night! Except my soup came from Progresso (Vegetable Noodle) and the chicken was leftover from my wife’s homemade chicken cheesesteaks. I added black pepper and curry and called it done.

August 14, 2018 at 7:49amChickens are SO NOT vegetarian (by choice). Anybody who thinks chickens are vegetarian has never thrown a tomato hornworm into a chicken yard. Yeah, life in the country ain’t for the faint of heart.
