We had a package of mixed cauliflower and broccoli. I boiled the cauliflower and roasted the broccoli, because I wanted different textures.
Meanwhile, I boiled some noodles (store-bought this time) and heated some meatless crumbles and cream of mushroom soup. When everything was done, I stirred some sour cream into the sauce.
So we had this:

I’ve been researching DIY meatless crumbles, and I just might give this recipe, which contains neither gluten nor mushrooms, for those who are averse to those ingredients, a try.

February 26, 2020 at 10:44amJust be certain, as I’m sure you will, that the cream of mushroom soup has no actual cream in it. What do you use, coconut cream? Flour-thickened unsweetened almond milk? I’m sure you’ve told me, but I’ve forgotten.
