Fried Rice Then and Later #QuarantineCooking

Often, for me, cooking is like Legos. Little bits of things go together really well to make a bigger thing.

Like fried rice, f’rinstance.

I started with a bit of frozen mirepoix (onion, carrots, and celery), and added leftover rice and a bit of cooked chicken from the freezer. I served it with a side of corn. It was delicious and filling, and we had a bit left over.

So, the next day, this happened:

Two little bits went together to make one bigger bit. That’s a breakfast plate, by the way, and small flour tortillas. Plenty for a satisfying lunch.

      Not having tasted one another’s, we’ll never know, but mine was purty durn good. 🙂
