Leftover Grilled Cheese

I always like to have a box of day-glo orange processed cheese around. Why, yes, I was raised in the 50s. Why do you ask?

#4 Daughter and I have revived the tradition my mother started of having an evening snackie. So this one night, I said, “Back in the day, we used to mix this cheese and a can of diced tomatoes with green chilies and make a chip dip.” And she was like, “Make it so!”

So I made it, and we ate it for two nights, and then there was just a tad bit left.

Then I thought, “I bet this would make a good grilled cheese sammich.”

And it did.
