I Forgot And Then I Remembered

I totally forgot about chicken croquettes! Hard to believe, but true. So I had some leftover chicken and I remembered, so I made some.

You take chopped cooked chicken meat (I prefer dark, but even white is good this way), mayonnaise, whatever herbs, spices, salt, and pepper you fancy, maybe some onion powder, and bread crumbs. Mix that up and either fry it or bake it until it’s hot. Doesn’t take long, since everything is already cooked.

I had mine topped with creamed peas. You just make a white sauce, add a little nutmeg, then put in some drained canned peas or cooked frozen peas.

SO GOOD! I won’t forget again!

    I might substitute creamed corn, but I’m ok with peas. It looks and sounds pretty good.

      I never thought of creamed corn! I like creamed corn, so I might just try it sometime. Thanks!

      I was raised on salmon croquettes. With the bones left in for extra crunch! lol

      I think I had cream sauce on the first chicken croquettes I ever had, so that’s how I have it fixed in my mind. //shaking my head//
