Food Tuesday: Filled Puffish Shells

So, this isn’t really vegetarian, BUT IT COULD BE, and the shells are.

I mixed about a quarter of a cup of flour, a pinch of salt, and a pinch of sugar, then rubbed in a tablespoon or so of frozen vegan stick “butter”. I added ice water until I could gently work it into a shaggy dough with my fingers. I rolled it out into a rectangle, put thin slices of frozen vegan butter onto a third of it, folded it like so and like so, rolled it into a rectangle again, and did the butter again and folded it again. I wrapped that in cling wrap and refrigerated it until I was ready to use it. Then I divided it in two and rolled each into a square.

I baked it in my air fryer at 400F for about 15 minutes.

Wadded up aluminum foil to shape them into cups.

Meanwhile, I cooked the filling.

Celery, onions, mushrooms, cooked chicken (could leave it out), vegan sour cream, and herbs.

The shells came out pretty good. Not like real puff pastry, but crisp, flakey, and buttery.

Sounds like a lot of work, but it wasn’t. And it sure was good.
