Lazy Eggplant Parm

Because, although I will do fancy, fiddly things when I feel like it, I don’t feel like it all that often.

So I have this off-brand George Foreman grill, and I use it a lot. And I got an eggplant at the farmers market.

So I cut the eggplant in half, rubbed it with olive oil and salt and pepper, and “grilled” it until it was black on the outside and tender on the inside.

Then I spooned some pasta sauce on one half and sprinkled it with Italian cheeses, including Parmesan.

Boom!

I saved the other half and made something else.

I guess you could call this eggplant pizza, if you wanted to. Whatever it was, it was mighty tasty.

    Not a huge fan of eggplant, but I have to say it does look rather tasty with the red sauce and the cheese.
