This could be made with real fish to be pescatarian, or it could be made with vegan “cheese” to be vegan, but this was made with Gardein’s F’sh Filets and actual sharp cheddar cheese.
A f’sh filet, a quick pickle of onion (didn’t have any red, which I would have preferred), shredded cabbage, and cheddar cheese, wrapped in a flour tortilla.
Quick pickle: vinegar, salt, pepper, and a little sugar. Soak onion shreds in it for at least 15 minutes.
Wrap it up and heat it long enough for the cheese to melt. SO GOOD!

April 3, 2024 at 7:31amI love shredded cabbage in fish tacos. It gives them just the right amount of crunch. When I think of the fish tacos I’ve had that I liked the most, they all have the fish on a bed of shredded cabbage.
