Food Tuesday: Gnocci The Easy Way

I CAN make gnocci. I’ve done it before. But they sell it ready-made at the grocery, so I usually make it easy on myself and just buy it.

Of course, I can’t let it go at that. I pour some olive oil into a cup and add some Italian herbs and a few red pepper flakes and let that sit for half an hour or so.

Meanwhile, I slow-fry onions and mushrooms in a dry pan.

Then I cook the gnocci, which takes maybe four minutes, tops, once the water comes to a boil.

The cooked gnocci, some of the water it was cooked in, and the herbed oil goes in the pan with the mushrooms and onions, with some Parmesan grated over the top and stirred in.

Easy and delicious, and it seems so fancy! Sometimes I add frozen peas when I cook the gnocci, which looks even fancier.
