Food Tuesday: Messy But Nourishin’

“Messy but nourishin’,” is what my grandpa would have said about this sandwich. He would also have called it a sammich.

I haven’t had eggs for a few days because we were under a boil water advisory and you gotta clean eggy things right away or they harden into cement.

So I made some, and made some toast to dip into the runny yolks, and then I broke both yolks during cooking. So I made an egg sammich. Mayonnaise on toast, a hot egg, cheese, another hot egg, and the other piece of toast.

Nutritious and delicious.

    Apologies in advance but…where’s the bacon? That sounds like an egg and bacon sandwich you can get here. It’s delicious but they use butter instead of mayo and they slather butter on top too. Hmm…okay, not a health food but yum 😀

      I hear you — bacon makes everything better. But I very seldom have bacon. When I do, I have had bacon-and-butter sandwiches, and they are DIVINE!

      I forgot to add: I like scrambled egg sammiches with mayo, but I get a little pushback from folks about adding the mayo. Good to find a kindred spirit.

        For some reason, I never put mayo on SCRAMBLED egg sammiches, just fried ones with busted yolks. People are funny little monkeys, aren’t we?
