Friend and fellow writer, the marvelous Teagan Geneviene, said she’s allergic to eggs so I decided to post about my egg/cheese substitutes. You can make your own, but I’m generally too lazy, so I buy mine. Here are some.
Eggs From Plants used to be JustEgg, but I suspect a lot of vegans passed it by because it sounded like it was egg and nothing else when it really mean it was “just” to chickens by not taking their eggs. Apparently they also make vegan mayo and vegan creamy salad dressings, but the grocery here on Walton’s Mountain doesn’t carry those.
I can get Hellman’s Vegan (sometimes marketed as Plant Based) Mayo (sometimes marketed as Spread & Dressing) at the local grocery.
I can also get the Simple Truth (a Kroger brand) and maybe one other brand of vegan cream cheese and vegan sour cream at the local store, but I have to go out of town to find Follow Your Heart and Daiya. Last I heard, Daiya’s slices, blocks, and sticks were sub-par, but that’s been a long time. I can vouch for their shreds, though.
As I said in a previous post, I’ve baked with these plant-based substitutes and they worked fine. I wouldn’t try them on an untested recipe for company, but I wouldn’t try any untested recipe for company. That’s just ASKING for trouble.
My nails this week weren’t what I planned, but what I planned didn’t work so I went with super simple. I’m sorry my cuticles are so scabby; we’ve been under a boil water advisory since last Wednesday, and I haven’t been able to scrub my nails under warm running water.
“Fall”, in case you don’t know, is US/Canadian for Autumn.

September 23, 2024 at 9:15amI am not vegan, just lactose intolerant, so my recommendations wouldn’t cut it for you and Teagan. A friend became sensitive to chicken eggs, so she now eats duck eggs. I suppose that doesn’t help someone who is allergic. I dislike Daiya cheese greatly and have tried and failed to find a non-dairy cheese I like, but found I can eat hard and aged cheese because it’s low in lactose. My neighbor’s daughter is vegan and she likes the VioLife brand. I do choose vegan baked goods when I can because it means no dairy inside and two of the local coffee shops do an excellent job with their items.

September 23, 2024 at 9:24amVioLife is good. the Daiya SHREDS really do it for me, but I know tastes vary. #4 Daughter doesn’t like vegan cheese because of the “mouthfeel” even when it’s melted. I’m not a good vegan at all, more of an aspiring one, so I do real cheese. If you can eat Parmesan, you have the best, anyway, IMO.

September 25, 2024 at 8:26amIt seems odd that I never thought about duck or goose eggs. LOL. But my reaction was so intense that I wouldn’t try, even if I could get them. I know you weren’t suggesting that I should.
Anyhow, 25 years ago, I started getting really sick every weekend. Then more often than that. At first I thought food poisoning, but soon realized it was a food allergy. I narrowed it down to eggs. But I had gotten so sick some of those times that I was bound to be 100% sure of the cause so that I was not taken by surprise later. I fried up a couple of eggs for dinner. Soon I was violently sick “from both ends.” I could barely turn myself around as each end repeatedly took a turn with… you know. I was unemployed so no insurance and I couldn’t afford an ambulance. The repetition went on for hours. Finally I knew I should call an ambulance anyway, but by then I couldn’t crawl to the phone.
Years later, sometimes I get “accidental egg” trace amounts in processed food without much effect, but I’m too big of a “chicken” to try fresh eggs again. 🐣🐤🐥🐔 Hugs.

The friend who buys duck eggs only has a sensitivity, not an allergy, although here sensitivities had her down to about 6-8 things she could eat…for two years. Now, she is much better, but remains vigilant when it comes to chicken eggs and a few other foods. Never eating an egg again is far better than being so sick that you think about calling an ambulance.

September 25, 2024 at 9:33amI don’t blame you for avoiding anything that gave you so violent a reaction! By all means, continue to avoid eggs! As Clint Eastwood said, “Do you feel lucky?” I wouldn’t. Thank goodness trace amounts don’t bother you!
