Food Tuesday: Dinner In A Jiff

I bought a package of little individually packaged Tilapia filets. I hate the extra packaging, but it sure makes it easy to cook for one.

I also bought a sack of shredded cabbage/carrot mix.

The fish package says to not cook from frozen, but you know what an edgy scofflaw I am, so I heated the pan, melted some vegan margarine, and slapped that frozen puppy right in, along with a big wad of that cabbage/carrot mix.

The fish cooks for five minutes on the first side. meanwhile, I season that upper side with salt, pepper, and Penzeys Justice seasoning blend.

Stir the cabbage, flip the fish, and cook for another five minutes. Mind you, these are filets about the size of a deck of playing cards, possibly a little thinner. Fatter fish would need to cook longer.

The result:

This is on a lunch plate, so it’s a small meal, but I’m just one little old lady, so that was plenty for me. When I made fish this way for #4 Daughter and her wonderful AlmostMister, I made two filets for each of them, and they were satisfied.

Freezer to plate in fifteen minutes — that’s a deal!

    That looks pretty good. I like that you ignore the rules. My wife made something the other night and said, “If you ever make these, pay no attention to the instructions.” Then she preceded to explain what she does.

      LOL! Sara is the same way. I ask for a recipe and she says, I can give it to you, but I don’t follow it. Same.
