So I cut a lobe off a yellow pepper and chopped that into something, and I had the rest of the pepper left. I also had some leftover rice I had made with some unused salsa that came with a Mexican dish I had DoorDashed to me one night.
Usually, peppers are green and are stuffed with meat and maybe a little rice, but #4 Daughter likes yellow peppers rather than green and my late husband, Charlie, couldn’t eat red meat so I got into the habit of just stuffing yellow peppers with flavor-packed rice and cheese.
Well, first you have to cook the pepper a little: rub it with oil, salt, and pepper, and broil it until the skin is dotted with black blisters, exactly how you do NOT want to look after a day in the sun. Then you cover the pepper with foil or a paper bag and let it sweat in there. Then the skin peels off, then you stuff the pepper.
This time, I had something called Fuego Monterey Jack, which is Monterey Jack with jalapenos chopped up in it. I mixed some into the rice, stuffed the pepper, and put a slice on top. Then I baked it at a moderate heat for about 20 minutes.

October 19, 2025 at 6:28amIt looks very good. I’ve always had stuffed peppers cooked with the skin on. This would be different, but if it has rice and cheese and pepper, it’s good.

October 19, 2025 at 12:05pmPeppers with the skin on are good, too, and hold their shape better. I just like the added “layer of flavor” that roasting and peeling add.
