Food Tuesday: An Omelette

Omelette, omelet, whatever. I make ’em a lot.They’re easy AF, for one thing.

This one is mushrooms, spinach, and cheese.

Here’s what you do: Crack an egg into a cup or a bowl (I use one for just me; Charlie and I used to use three for the two of us) and add a little water. Some people use milk, but I heard that water makes a fluffier result, and water is cheaper than milk, so I use water. Add salt, pepper, marjoram, and whip it. Whip it good.

Heat a pan and fry the mushrooms until they throw off their water and it evaporates. THEN put butter (or vegan margarine) in the pan and add cheese and spinach and then — yes — you fold it in.

Let it cook, fold it into quarters or roll it up or whatever and tip it out onto a plate and put it in your belleh.

    I love omelettes. That one looks delicious. When you’re grilling the mushrooms, do they ever pop (tiny explosion)?

      No, because I cook them in a dry pan. That explosion is the liquid they give off turning to steam in the oil or butter.
