Pesto Rotini #Vegetarian could be #Vegan

Daughter #4, the estimable Sara Marian, visited yesterday for Father’s Day. Well, she wasn’t the only one, but she’s the only one who stayed for supper. She’s one of the ones who got us started on vegetarianism; she’s no longer vegetarian, but she gamely suffers for her past and eats veg when she visits.

We had this.

RotiniPestoThat’s garden pasta: pasta made with carrots, spinach, and … wheat, I guess. While that was cooking, I chopped onions and mushrooms and cut asparagus into bite-sized yummies and sauteed them all in olive oil. When the pasta was done, I mixed in some home-made pesto (with cheese, which makes it vegetarian but not vegan) and the veg. There’s a world of vegan pesto recipes out there, though, so that’s an option.

    I love any kind of pasta, and would eat more of it if I thought I wouldn’t be two tons of swollen joints πŸ™‚
    This looks great. I can always get down on some ‘squiggly salad!’

      Squiggly Salad! There’s a name a toddler would go for! I wish I’d thought of that way back when. I’ll have to pass that along to #4 daughter to use on her picky niece.

    Yum! In my mind, I’m adding avocado and lots of bell peppers, because, well, I love ’em!
