I had a great time last month, doing Story A Day May! I got a lot of work out of it, and I look forward to putting together some collections including the stories I wrote in May.

Okay, so back to my regular schedule. Wednesday is food day, so here is food.
One-Pan Vegetarian (could be Vegan) Quesadilla
Heat a little bit of coconut oil in a skillet. cut up portobello mushrooms, sweet bell peppers, summer squash, zucchini, asparagus, green onions, and/or what have you and put them into the hot coconut oil. Cook until as tender as you like. Those little red things are tiny nubbins of radish that I thinned out. They were too little to be hot, which suited me just fine.
Arrange your goodies on a tortilla. Add some salsa and, if you eat cheese, some cheese. Maybe you could garnish it with a little chopped green onion.
It was really really good, too.

June 1, 2016 at 6:18pmYes, Alana, and I tried it another day wrapped in Bibb lettuce instead of the tortilla, but the lettuce was too delicate and it all fell apart. 🙁 I’ll have to try iceberg lettuce, instead. I’m not gluten-free, but I have a friend who is, and I’m trying to cut back a little on carbs.
