Fake Commercial Cream of Mushroom Soup #recipe

I couldn’t figure out how to make it all gray or the mushrooms all rubbery, but this was pretty good soup, anyway.

cofmFake Commercial Cream of Mushroom Soup

  • mushrooms
  • onions (I used Vidalia)
  • butter or margarine
  • flour
  • milk
  • thyme
  • salt

Chop the mushrooms and onions and cook them in margarine (in a saucepan) until the onions are tender and the mushrooms are reduced. Add more margarine, if necessary (and when is it ever not necessary?) and stir in the flour. Cook for a few minutes, stirring constantly. Add the milk and thyme and bring to a simmer, stirring constantly, until the soup is thickened and glossy. Season to taste. I ground some pepper on top of mine.

    One birthday meal for Bruce, I managed to cook up a variety of Chinese dishes that all tasted as if purchased at the restaurant! The sauces, I find, are the devil to duplicate!

    And afterward, when I decided to make that stirfry thing again, I couldn’t figure out which cookbook and recipe had been the secret bonus perfect one!

    I still can’t! Darn it.

    Right on. I like to avoid all the -fiineeclose and -deerwaadizon and whatever else they put in processed food, much as possible. I use buttah though, and no thyme. I almost never buy vidalias. I don’t know what’s wrong with me. I bought them all the time in Georgia…
