So Sara brought in some Birria tacos. She ate them all up, except the bit she gave me to taste (it was very, very good — yes, I fall off the turnip wagon occasionally … sometimes … all too often). She left the Birria liquid and the salsa verde. So I made a vegan cheese quesadilla, dipped it in the Birria liquid, fried it, and made this not-quite-vegan thing:
I wonder if I can make the Birria stew with tofu or seitan….? The spices and the umami are the things, right? Right?

October 11, 2023 at 9:14amImagine writing them. Especially since we don’t have anyone around here that makes good fried shrimp and/or mushrooms. One guy at the bar I visit on most Saturdays, has been begging the owner to add fried mushrooms to the menu.
