So I made this thing. Some time ago, during a severe attack of ambition, I bought a box of frozen phyllo sheets, put them in the freezer, and tried to forget about them. Then the doctor advised me to cut down on white bread, and I thought:
- If I’m going to transgress, I might as well make it as large and enjoyable a transgression as possible.
- If I do it right, it won’t be white anymore.
So I fried some onions, mushrooms, and leeks, seasoning them with salt, pepper, and Penzeys Greek Seasoning.
I lined a baking sheet with foil and brushed it with melted vegan margarine. Then I laid down ten phyllo sheets, two at a time, brushing each layer with melted margarine. The vegetables looked sad and lonely in the middle of all that luxury, so I added blobs of vegan ricotta. Then, two by two, I laid down ten more sheets of phyllo, again brushing each layer with vegan margarine.
I baked it for an hour at 325F (~163C).
Was it a success? You tell me.

March 13, 2025 at 10:11amReminds me of baklava, but that requires each sheet to be buttered, except the one in the center that the nut mix goes on. Then it all get covered in syrup. This looks good, but I might be sad if I aw it without knowing ahead of time what it was.

March 13, 2025 at 2:13pmThe recipe I used for this was one for baclava, except savory instead of sweet. It’s also the way you make spanakopita and kreatopita, which are also savory. Now that I know I can do it, I will definitely make some baclava sometime.
