THIS iteration was NOT vegan/vegetarian, but it could easily be so.
So I wanted mac and cheese, but I had no macaroni and I had no milk. So I used tri-color rotini and vegan Alfredo sauce instead of macaroni and white sauce. I added bacon bits and TONS of different cheeses, but if I had left out the bacon I would have had vegetarian. If I had access to Daiya vegan shreds, I would have used those and would have had vegan. So.

It was DELICIOUS!
