There ain’t no recipe for sushi. As long as you have seaweed paper, rice, and innards, you can make it.
Here’s one of mine.

#4 Daughter gave me a sushi mat, so I used that, but it isn’t necessary. The rice I used said on the bag that it was good for sushi. I made it with a little sesame oil in the water and added salt and Ume Plum Vinegar, but I could have used rice vinegar or any kind of vinegar to give it a little bite. Or, I guess, lemon juice.
In the middle, I put strips of yellow bell pepper, avocado, and cucumber. I FAFO to put less rice than I thought I needed on top of the seaweed sheet and to wet the ends of the seaweed so the ends would stick together.
So, seaweed paper, rice, filler in the middle, roll ‘er up, and refrigerate for a bit. I like to nuke mine for a few seconds when I’m ready to eat it, just to knock the chill off.
FYI, I used to hate the seaweed paper, but now I like it — but only wrapped around sushi, no other way.
If you have leftover rice to begin with, this is so quick and easy!
