A Great Haul and a Hekkin Good Salad #Vegan

Y’all know I hate WalMart, but they have a lot of vegan stuff, so I brave the rage of my late husband’s spirit and go there every two weeks or so.

Here’s one haul:

Vegan cheese used to be nasty, but it’s really good, now. The dumplings were nice. The vegetable “purses” were nice. I love the f’sh filets and the veggie burgers. Not too crazy about the eggrolls, and the “deli meat” was … imagine my making a face and pretending to stick my finger down my throat.

ANYWAY, apropos of none of that, I made this super salad. I used to despise salads, but I’ve come to love them A LOT. Sometimes, I just have a hekkin big salad for a meal.

This is lettuce, fake bacon bits, plant-based “cheese”, and a hearty sprinkle of that Salad Topper stuff: cashews, edamame, dried cranberries, and sunflower seeds. I dressed it with California French dressing and a squirt of Sriracha sauce.

Delicious and nutritious!

    I’m more of a purist and make my salad from scratch and add the protein of my choice to the top. And, then homemade spicy dressing.
    To each, one’s own.

      I made my salad from scratch. Scratch was just some lettuce. I aspire to making my own dressing, one salad at a time, but I have this bottle of California French in the fridge, and I don’t want it to go to waste. 🙂
