Breakfast For One #Vegetarian

I’m out of eggs now, but while I still had some, I made this treat.

I got me a tiny little pan to cook my single egg.

I wasn’t hopeful about my chances of flipping it and having it land back in the pan, rather than on the stove, the floor, or my hand, so I put on its tiny little hat.

      I don’t generally go for zing in my breakfast, but you’re not wrong. I’ll keep that in mind, the next time I have breakfast for lunch or supper.

    lol – it looks delicious, Marian, but I do worry a bit about you getting enough protein now that you’ve gone vegan. Won’t you get sick of pulses all the time?

      Everybody worries about vegetarians and vegans getting enough protein. Meat IS packed with protein, but vegetables have protein, too. Soybeans (tofu, seitan, tempeh) have plenty of protein, and I keep bags of vegan “meat” in the freezer. I LOVE tofu, and I know how to make my own seitan, which is fun. Mushrooms have protein, and I could LIVE on mushrooms. Potatoes, sweet potatoes, green peas (another three of my favorite foods) have protein, and so do quinoa (love it) and nuts/nut butters. Oh, and oatmeal! I had oatmeal with walnuts in it for breakfast. ๐Ÿ™‚ It’s so sweet of you to be concerned! I love you, my sister! <3

        lol – I knew about the pulses but not about the other vegetables. I’ll stop worrying now, well, mostly. :p
