Spring Rolls — Natural-Born #Vegan and #GF

Another thing I made for our room party at Imaginarium is spring rolls. They’re wrapped in rice paper and have rice noodles in them.

Look for a recipe. SO. MANY. But all of them I found had six things in common:

Basics for Spring Rolls

  • spring roll wrappers (duh)
  • rice noodles
  • cilantro
  • basil
  • mint
  • lettuce

I had a bunchabuncha veg, so, in addition to the noodles, lettuce, and herbs, I chopped up:

  • cabbage
  • carrots
  • celery
  • spring onion
  • zucchini
  • yellow squash
  • red peppers

Can’t remember now if I put in corn and/or mushrooms, but I wouldn’t be surprised. I wish I’d had some bean sprouts and/or water chestnuts but, alas, I did not. Salt and pepper, for sure.

I filled them too full, and they fell apart. Next time, I won’t be so generous!

They were a hit, even though they fell apart. As my grandpa would have said, “That don’t hurt the eatin’ of it.” Also: “Messy but nourishin’.”

      Make you some. I guess there’s a little carbs from the wrapper and the rice noodles, but the rest is pure veg.
