Tuesday Food: End-Of-The-Summer Salad

The wonderful Patt Wuest, who makes THE BEST BREAD and sells it at the Saturday farmers’ market, made a new one: jalapeno cheddar. So I bought a quarter loaf. Friends, it is SO GOOD! I was a little afraid of the hot pepper, but it isn’t too hot. It’s just right for me.

ANYWAY, it was good just sliced and toasted and buttered, but I cubed some and toasted the cubes in olive oil and put them in this salad:

All from the farmers’ market: tomatoes, cucumbers, yellow peppers, jalapeno cheddar bread, salt and pepper, and a squeeze of lime juice. I ate it all in one sitting. YUM!

I also used some of that bread as a filler in a vegan meatloaf, and used some of the leftover meatloaf to rellenos some big red chiles. OMG

    That salad looks and sounds delicious. I’m not sure about the vegan meatloaf, but I’d have a no-thank-you portion.

      I used Impossible meat substitute. I’ve tried making vegan meatloaf with, like, nuts and stuff, and wasn’t best pleased with the results. This was stellar! Meatloaf sammich is one of my favorite lunches, and this worked great.

        Next time you want a sammy, cut a very thin slice of leftover meatloaf and tuck it in between the cheese in a grilled cheese sandwich.

          “very thin slice of meatloaf” … I understand all the words, but they don’t make any sense put together like that.

            Thin enough to still let it be a grilled cheese sandwich rather than a meatloaf sandwich. It’s a fine line.
