I found a box of Manischewitz matzo ball mix in my pantry, so I decided to make matzo ball soup. I heated some oil in a deep pot and fried onions and leeks until they were tender. Then I added some thinly sliced celery, ground sage, and salt. I added two boxes of chicken broth bought for the occasion and tasted it. Needed more salt. Needed more sage. Needed more … something … so I added two blocks of Edward & Sons Not-Chick’n bouillon cubes. Perfect! I made the matzo balls according to package directions, dropped them into the boiling broth, covered the pot, and turned it down to simmer for 20 minutes. So fluffy! So good!
At the last minute, I was afraid the soup wouldn’t be enough (it would have been), so I made some last-minute latkes. Here’s how: I defrosted two frozen hashbrown patties, added salt, pepper, onion powder, Penzeys Justice, some Just Egg egg substitute, and a little flour. I fried them in a little oil and drained them on paper towels before serving.
I am SO not a food photographer, but trust me that it was good.

January 7, 2025 at 10:16amYou and me, both! Sadly, I’ve been diagnosed as obese, and told to lay off “white foods and oils”. So fried taters have to move from my “go to” column to my “rare treat” column.

January 1, 2025 at 12:36pmI had read about matzo ball soup in lots of stories and books, so when Mom and I visited NYC and went to The Stage Door Deli, we ordered some. SO GOOD!!!! It’s good vegetarian/vegan as well as with chicken, and you can cook the matzo balls in plain water and have them not-soup.
