Two things I know:
- Some foods, asparagus chief among them, do not take well to freezing.
- Some foods, asparagus chief among them, do not take well to steaming.
So I bought a Steam-In-Bag of asparagus. It was as nasty as you think.
BUT, waste not, want not, so I made asparagus soup.

I cut the tips off my leftover spears and set them aside, and cut the other spears up. I brought a cup of water with Not-Chick-n vegan bouillon in it to boil, added the asparagus (minus the tips), then pureed them with my new immersion blender. I took it off the heat, melted in a couple heaping tablespoons of vegan sour cream, stirred in the tips, and voila!
The salad is a fresh pear, walnut pieces, vegan “feta”, and (because I had half an orange in my refrigerator) the juice of half an orange.
I really need to get a new tablecloth. Maybe I’ll be able to keep it for a couple of weeks before one or another of the cats makes mincemeat out of it.

February 1, 2025 at 12:31pmI think if you steam it yourself from fresh, it can be delicious, but this was soggy. And asparagus soup is DELICIOUS! Especially with sour cream in it.
