Food Tuesday: Enchiladish

I made this the other night and #4 Daughter informed me that it was “fire”. She also said it was the best enchilada I’d ever made.

I started by laying down a base of tomato bruschetta because that was what I had. Then I put in a layer of torn up flour tortilla. Then a layer of corn, cooked chicken, Fuego Colby Jack cheese, more tortilla, and salsa verde. I baked that until it was good and hot (350F for 20 minutes), then topped it with sharp cheddar and baked it until the cheddar started to brown. Topped it with green onions, and we ate.

Oh, my, it was good. I beg your pardon — it was fire.

    That looks and sounds good. I love how many of your recipes include “…because that was what I had.” as an ingredient.
