DIY Sheetpan Gnocci: Mine Was #Vegan, But Yours Can Be #Vegetarian Or #Meaty

I got this recipe from the Kitchn, but I’ve seen it otherwhere in other iterations. Basically, you toss gnocci with oil, vegetables, herbs, and seasonings, then spread it on a sheetpan and roast it at 450F (232C) for about 20 minutes (140 minutes in dog years).

It looked like this before I cooked it.

It looked the same after I cooked it, only cooked. As you see, I used green beans, cherry tomatoes, and red onion. I usually put mushrooms in everything, but I suppose I was out. I’ve seen blobs of fresh mozzarella baked on it which, of course, would make it vegetarian rather than vegan. You could also add tofu, chicken, or some other protein. I scraped the finished product into a casserole dish and topped it with vegan Parmesan and took it to a cook-out.

    I would toss in the chicken, maybe, but that looks very good.
