Food Tuesday: Vegan Cornbread

Our vegan daughter hosted the big family Labor Day get-together. It’s family tradition to have bean soup and cornbread, no matter what else is on the menu. Now, cornbread generally contains egg and milk, so she didn’t want to make it, since she’d have to buy products she normally refuses to buy.

I lean toward vegetarian/vegan, but I’m not very good at it, so she asked me if I would make the cornbread.

One of the things I never buy is milk, and I only buy eggs during the summer, when I can buy them from people who treat their chickens well and let them retire with dignity when their egg-laying days are done (the chickens’ egg-laying days, I mean, not the people’s).

So I decided to try to make vegan cornbread, using JustEgg egg substitute and NotMilk milk substitute. I used butter-flavored Crisco as the shortening. Oh, I also added just a smidge of plain vinegar for a buttermilk-y vibe.

They liked it.

    That sounds good! I’ve never tried making cornbread before, but now I want to test it out (even if I’m not much of a baker). It’s lovely how food is such a big part of family traditions. I remember learning many of my favorite recipes by watching my relatives in the kitchen and picking up all the little tips and tricks which make their dishes feel so special.

      It used to drive me crazy when I would ask my mother-in-law for a recipe and her measurements were like, “A pinch of this and a handful of that” and her directions were like, “Stir it until it looks right.” Now, that’s how I cook.

    I love cornbread. I’m not sure about this version, but I’d give it a try. I applaud your creative spirit in making it.

      Everybody I gave it to looked astonished and said, “It tastes just like cornbread!” But there’s no need to make it, if you’re cooking for people who can/will eat dairy and eggs. 🙂

        Daughter is vegetarian, but my wife does a vegan fast (religious reasons) at various times throughout the year.
