Some vegan substitutes are crap, and some are good. As always, YMMV, but here are my faves for an omelet:
- Morningstar Farms veggie breakfast sausage patties. Hate veggie breakfast links, love the patties. Go figger.
- JustEgg egg substitute. So creamy!
- Country Crock plant butter
- Daiya Cutting Board Cheeze Shreds
So, melt some plant butter in a hot pan. Pour in the JustEgg. Sprinkle with cheeze shreds. Defrost a sausage patty and break it up into the middle. Salt and pepper, and I also like marjoram.
When it’s still a wee bit ooey in the middle (how I like it — you do you), fold it up like a burrito and slide it out onto your plate.
